Red Cabbage Slaw

This red cabbage slaw made with sliced red cabbage, grated carrots, and walnuts tossed in a creamy dressing makes a colorful, crunchy side dish.

Ingredients:

  • 1/2 red cabbage, sliced very thinly

  • 1/2 green bell pepper, sliced very thinly

  • 1 granny smith apple, sliced very thinly

  • 1 stalk celery*, sliced very thinly

  • Optional: 1/4 onion, sliced thinly

Dressing Ingredients:

  • 1/3 cup olive oil

  • 1/3 cup apple cider vinegar

  • 2 teaspoons sugar

  • 1 teaspoon mustard, dijon preferred

  • 1 clove garlic, minced or 1 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon lemon juice


Directions:

  • Wash and slice all vegetables very thinly and add to a large bowl.

  • In a jar with a lid, add the dressing ingredients and shake well to combine. Add more sugar to cut the acidity if desired, or add more lemon juice to increase acidity.

  • Pour the dressing over the vegetables and toss to coat. Let sit for at least 15 minutes, or make a day ahead for best flavor.
