Red Cabbage Slaw

This red cabbage slaw made with sliced red cabbage, grated carrots, and walnuts tossed in a creamy dressing makes a colorful, crunchy side dish.
Ingredients:
1/2 red cabbage, sliced very thinly
1/2 green bell pepper, sliced very thinly
1 granny smith apple, sliced very thinly
1 stalk celery*, sliced very thinly
Optional: 1/4 onion, sliced thinly
Dressing Ingredients:
1/3 cup olive oil
1/3 cup apple cider vinegar
2 teaspoons sugar
1 teaspoon mustard, dijon preferred
1 clove garlic, minced or 1 teaspoon garlic powder
1/4 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon lemon juice
Directions:
Wash and slice all vegetables very thinly and add to a large bowl.
In a jar with a lid, add the dressing ingredients and shake well to combine. Add more sugar to cut the acidity if desired, or add more lemon juice to increase acidity.
Pour the dressing over the vegetables and toss to coat. Let sit for at least 15 minutes, or make a day ahead for best flavor.
