Blistered BBQ Tomatoes and Summer Squash

This yellow summer squash recipe with pan blistered tomatoes is a great way to use your garden goodies!

Ingredients

  • 2 medium yellow squash

  • 4 medium slicing tomatoes

  • 1/2 green bell pepper

  • 1 tablespoon oil

  • 3 tablespoons of your favorite barbecue sauce

  • salt and pepper to taste

Directions

  • Preheat oven to 375 deg F.

  • Slice the yellow squash into 1/4" thick slices, the tomatoes into 1/2" thick wedges, and the pepper into 1/2" wide strips

  • Toss with the olive oil and 1 tablespoon of the barbecue sauce

  • Arrange in a single layer on a sheet pan and bake for 15 minutes, until squash and tomatoes are tender.

  • Increase heat to 475 and cook for 5 minutes more, then turn the broiler on and cook for 3 minutes, until the tomatoes blister and squash and peppers develop a bit of char.

  • Remove from oven and toss with the remaining barbecue sauce.
