Banana Bread

With its moist texture, banana and brown sugar flavors, and super soft crumb, this is the best ever banana bread recipe.
Ingredients
4 over ripe bananas
3/4 cup sugar, white or brown
1/2 cup vegetable oil
1 teaspoon vanilla
2 eggs
2 cups flour
1/4 teaspoon salt
1 1/2 teaspoons baking soda
Optional: 3/4 cup chocolate chips, 1 cup walnuts
Directions
Preheat oven to 350°F.
Mash very ripe bananas in a large bowl with a whisk until smooth.
Add the sugar and oil and whisk to combine.
Add the vanilla and eggs and whisk to combine.
Add the flour, salt, and baking soda and stir until just combined. If adding walnuts and chocolate chips, add them just before all of the flour is incorporated.
Don’t overmix! Once all of the flour is hydrated the batter is ready. It should be slightly lumpy.
Distribute the batter among a greased loaf pan and lined muffin tin. Bake the muffins for 18-24 minutes, and the loaf for 35-45 minutes, until a knife inserted in the center comes out almost clean. Cool before cutting.
