Banana Bread

With its moist texture, banana and brown sugar flavors, and super soft crumb, this is the best ever banana bread recipe.

Ingredients

  • 4 over ripe bananas

  • 3/4 cup sugar, white or brown

  • 1/2 cup vegetable oil

  • 1 teaspoon vanilla

  • 2 eggs

  • 2 cups flour

  • 1/4 teaspoon salt

  • 1 1/2 teaspoons baking soda

  • Optional: 3/4 cup chocolate chips, 1 cup walnuts


Directions

  • Preheat oven to 350°F.

  • Mash very ripe bananas in a large bowl with a whisk until smooth.

  • Add the sugar and oil and whisk to combine.

  • Add the vanilla and eggs and whisk to combine.

  • Add the flour, salt, and baking soda and stir until just combined. If adding walnuts and chocolate chips, add them just before all of the flour is incorporated.

  • Don’t overmix! Once all of the flour is hydrated the batter is ready. It should be slightly lumpy.

  • Distribute the batter among a greased loaf pan and lined muffin tin. Bake the muffins for 18-24 minutes, and the loaf for 35-45 minutes, until a knife inserted in the center comes out almost clean. Cool before cutting.
